Pear Bottom Gingerbread

You can serve this as a fragrant, spicy dessert or a breakfast treat.  Either way, finish with a mound of whipped cream, ice cream or greek yogurt for added luxury.

Prep time: 10 minutes
Baking time: 25-30 minutes
Serves: 4-6

INGREDIENTS:

  • 3 pears
  • ¼ cup packed brown sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon cornstarch
  • ¾ teaspoon cinnamon

Gingerbread
  • ½ cup reconstituted goat milk
  • ¼ cup molasses
  • 2 tablespoons vegetable oil
  • 1 egg
  • 1 cup all purpose flour
  • 1 teaspoon ginger
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon nutmeg
  • ¼ cup packed brown sugar
METHOD:
  1. Preheat oven to 350 °F (180 °c). 
  2. Peel, core and slice pears into a greased 8-inch (2L) square baking dish.
  3. In a small bowl, combine sugar, lemon juice, cornstarch and cinnamon. Pour the mixture over the pears, and toss until the pears are coated.
  4. In mixing bowl, combine goat milk, molasses, oil and egg.
  5. In another bowl, sift together flour, ginger, baking soda, baking powder and nutmeg; stir into the wet mixture. Mix until wet and dry ingredients are incorporated.  
  6. Pour the batter over pears, spreading evenly.
  7. Bake for 25 to 30 minutes until a skewer comes out clean of the cake layer on the top 
  8. Let stand for 5 minutes. Invert onto serving plate if desired. Makes 8 servings.
