Pear Bottom Gingerbread
You can serve this as a fragrant, spicy dessert or a breakfast treat. Either way, finish with a mound of whipped cream, ice cream or greek yogurt for added luxury.

INGREDIENTS:
- 3 pears
- ¼ cup packed brown sugar
- 2 tablespoons lemon juice
- 1 teaspoon cornstarch
- ¾ teaspoon cinnamon
Gingerbread
- ½ cup reconstituted goat milk
- ¼ cup molasses
- 2 tablespoons vegetable oil
- 1 egg
- 1 cup all purpose flour
- 1 teaspoon ginger
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- ¼ teaspoon nutmeg
- ¼ cup packed brown sugar
- Preheat oven to 350 °F (180 °c).
- Peel, core and slice pears into a greased 8-inch (2L) square baking dish.
- In a small bowl, combine sugar, lemon juice, cornstarch and cinnamon. Pour the mixture over the pears, and toss until the pears are coated.
- In mixing bowl, combine goat milk, molasses, oil and egg.
- In another bowl, sift together flour, ginger, baking soda, baking powder and nutmeg; stir into the wet mixture. Mix until wet and dry ingredients are incorporated.
- Pour the batter over pears, spreading evenly.
- Bake for 25 to 30 minutes until a skewer comes out clean of the cake layer on the top
- Let stand for 5 minutes. Invert onto serving plate if desired. Makes 8 servings.
